Paua Fritter Recipe with Smoked Kelp Aioli and Watercress Salad

Paua Fritter Recipe with Smoked Kelp Aioli and Watercress Salad

Ingredients
 200 g paua
 2 cloves of garlic
 1 brown onion
 2 eggs
 500 g breadcrumbs
 flour
 salt
 baking powder
 parsley
 smoked kelp seasoning
 1 tsp wholegrain mustard
 2 lemons
 oil
 watercress
 1 red onion
 spring onions
 1 red capsicum

Directions

1. Paua Fritters: Roughly chop onion and peel garlic. Place in food processor with wild paua trim and blend until smooth. In a mixing bowl add 1 cup of flour, 1 teaspoon of baking powder, 1 teaspoon of salt and 1 egg. Mix in the minced paua and onion as well as some finely chopped parsley. Then add a cup of milk or more to make a fritter mix (not too stiff). Fry in oil at a low temperature and serve.

2. Aioli: Place the egg yolks in a deep, heavy mixing bowl that will not move across the counter (you need both hands for the next step). Using a hand mixer beat the egg yolks, mustard, squeezed lemon juice, salt and pepper. Very slowly (remember very slowly) pour in the oil. Watch in amazement as the mixture turns to mayonnaise. Then add 2 cloves of crushed garlic & a pinch of smoked kelp.

3. Salad: Mix watercress with thinly sliced red onion & red capsicum; season with sea salt & cracked pepper.
